How to make Chickpea Tomato Soup
Step 1 – Boil the chickpea
Soak chickpeas overnight and boil it nicely with some water, then drain the water and keep it aside. To start with, heat oil in a non-stick pan on medium flame and add chopped onion in it. Sauté over a medium flame until translucent.
Step 2 – Simmer the soup
Once done, add chopped garlic and rosemary leaves in it. Cook for a few minutes then add chopped tomatoes, vegetable broth, chickpeas and a cup fresh cream. Bring it to boil and simmer for 15 minutes.
Step 3 – Season the soup
Sprinkle salt and oregano to taste and mix well to incorporate the ingredients well. Allow the soup to turn a bit thick, then transfer the soup to the serving bowls and add in a handful of boiled chickpeas, sesame seeds and some basil leaves and enjoy.
Step 4 – Garnish and enjoy!
Top up the soup with ricotta cheese and indulge in the goodness!
