Here’s a stir fry for you, which is not just vegan and easy to prepare, but will also change your perspective about the not so loved karela (bitter gourd or bitter melon). This Karela Fry recipe is lightly spiced and tangy, which balances the bitter tones of the karela. The Bitter Gourd Fry or Kakarakaya Fry gets done super quickly and has a unique flavor profile.

How to make Karela Fry

Step 1 – Wash and soak the bitter gourd
To begin with this easy recipe, wash and soak the karela (bitter gourd) with a dash of salt.

Step 2 – Cut thin slices
Drain the excess water and cut thin slices of karela and transfer to a plate.

Step 3 – Marinate
Sprinkle salt, turmeric and red chili powder(optional) and marinate the karela and keep aside for 20 minutes.

Step 4 – Serve hot
Take a pan and add oil, once the oil is hot enough, reduce the flame and gently slide the karela slices. Deep fry till they turn crispy, take out the karela slices on a tissue paper. Remove excess oil and serve hot with rice and dal. Enjoy!
