Ingredients:
- 6 slices of bread (white, whole wheat, or multigrain)
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 1 green chili, finely chopped (optional)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- 1/2 teaspoon garam masala (optional)
- 1/4 cup peas (fresh or frozen)
- 1 small carrot, finely chopped (optional)
- 1/4 cup bell pepper, finely chopped (optional)
- A few curry leaves
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Lemon juice (optional)
Instructions:
- Prepare the Bread:
- Cut the bread slices into small cubes and set aside.
- Heat Oil:
- In a pan, heat the oil over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and curry leaves, and sauté for a few seconds until aromatic.
- Sauté Vegetables:
- Add finely chopped onions and green chilies. Sauté until the onions turn translucent.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add Spices:
- Add turmeric powder, red chili powder, garam masala (if using), and salt. Mix well.
- Add peas, carrots, and bell pepper (if using). Cook until the vegetables are tender.
- Add Bread:
- Add the bread cubes to the pan. Mix gently to coat the bread with the vegetable and spice mixture.
- Cook for 2-3 minutes, stirring occasionally, until the bread is heated through and slightly crispy.
- Garnish and Serve:
- Garnish with fresh coriander leaves and a squeeze of lemon juice if desired.
- Serve hot as a breakfast or snack.
