Chana Masala Burgers Recipe

These delicious homemade veggie burgers are inspired by a classic Indian dish starring chickpeas in a spicy tomato gravy. Mango powder, also known as amchoor, is made from dried green mangoes and lends an earthy-tart flavor to Indian dishes. Look for it in Asian markets.

Ingredients:

For the Patty:
  • 2 cups cooked chickpeas (or one 15 oz can, drained and rinsed)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (optional)
  • 1/2 cup breadcrumbs (or more as needed)
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon chana masala spice blend (or garam masala)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil (for cooking the patties)
For the Burger Assembly:
  • Burger buns
  • Lettuce leaves
  • Tomato slices
  • Red onion slices
  • Cucumber slices
  • Your favorite sauce (like yogurt sauce, mint chutney, or vegan mayo)

Instructions:

  1. Prepare the Patty Mixture:
    • In a large mixing bowl, mash the chickpeas using a fork or a potato masher until mostly smooth with some chunks for texture.
    • Add the chopped onion, minced garlic, grated ginger, and green chili (if using) to the mashed chickpeas.
    • Stir in the breadcrumbs, chopped cilantro, chana masala spice blend, ground cumin, ground coriander, turmeric powder, paprika, salt, pepper, and lemon juice.
    • Mix everything together until well combined. If the mixture feels too wet, add more breadcrumbs as needed to help bind the mixture.
  2. Shape the Patties:
    • Divide the mixture into 4-6 equal portions and shape each portion into a patty.
  3. Cook the Patties:
    • Heat olive oil in a large skillet over medium heat.
    • Add the patties to the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and crispy.
  4. Assemble the Burgers:
    • Toast the burger buns if desired.
    • Place a lettuce leaf on the bottom half of each bun.
    • Add the chana masala patty on top of the lettuce.
    • Top with tomato slices, red onion slices, and cucumber slices.
    • Drizzle with your favorite sauce.
    • Place the top half of the bun on top and serve immediately.
