Here’s a delicious recipe for crispy vegetable pakoras:
Ingredients:
- Vegetables: 1 cup of mixed vegetables (potatoes, onions, cauliflower, spinach, etc.), thinly sliced or chopped
- Chickpea Flour (Besan): 1 cup
- Rice Flour: 2-3 tablespoons (for extra crispiness)
- Spices:
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Water: As needed
- Baking Soda: A pinch (optional, for extra fluffiness)
- Fresh Herbs: Chopped cilantro or mint (optional)
- Oil: For deep frying
Instructions:
- Prepare the Vegetables: Wash and chop the vegetables into thin slices or small pieces.
- Make the Batter:
- In a mixing bowl, combine the chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.
- If using, add a pinch of baking soda.
- Gradually add water to the dry ingredients, mixing until you achieve a smooth, thick batter that can coat the vegetables.
- Mix in the Vegetables: Add the chopped vegetables to the batter and mix until they are well coated. If desired, fold in the chopped herbs.
- Heat the Oil: In a deep frying pan, heat enough oil for deep frying over medium heat. To check if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Fry the Pakoras: Carefully drop spoonfuls of the batter-coated vegetables into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until they are golden brown and crispy, about 3-5 minutes.
- Drain: Use a slotted spoon to remove the pakoras and place them on a paper towel-lined plate to drain excess oil.
- Serve: Enjoy the pakoras hot with mint chutney, tamarind sauce, or your favorite dipping sauce!
Tips:
- For added flavor, you can include chopped green chilies, ginger, or garlic in the batter.
- Experiment with different vegetables according to your preference.
Enjoy your crispy vegetable pakoras!
