Here’s a delicious recipe for crispy vegetable pakoras:

Ingredients:

  • Vegetables: 1 cup of mixed vegetables (potatoes, onions, cauliflower, spinach, etc.), thinly sliced or chopped
  • Chickpea Flour (Besan): 1 cup
  • Rice Flour: 2-3 tablespoons (for extra crispiness)
  • Spices:
    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon red chili powder (adjust to taste)
    • Salt to taste
  • Water: As needed
  • Baking Soda: A pinch (optional, for extra fluffiness)
  • Fresh Herbs: Chopped cilantro or mint (optional)
  • Oil: For deep frying

Instructions:

  1. Prepare the Vegetables: Wash and chop the vegetables into thin slices or small pieces.
  2. Make the Batter:
    • In a mixing bowl, combine the chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.
    • If using, add a pinch of baking soda.
    • Gradually add water to the dry ingredients, mixing until you achieve a smooth, thick batter that can coat the vegetables.
  3. Mix in the Vegetables: Add the chopped vegetables to the batter and mix until they are well coated. If desired, fold in the chopped herbs.
  4. Heat the Oil: In a deep frying pan, heat enough oil for deep frying over medium heat. To check if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
  5. Fry the Pakoras: Carefully drop spoonfuls of the batter-coated vegetables into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until they are golden brown and crispy, about 3-5 minutes.
