Dahi Aloo is a flavorful North Indian dish made with potatoes (aloo) cooked in a spiced yogurt (dahi) gravy. Here’s a simple recipe:
Ingredients:
- 4 medium-sized potatoes (boiled and peeled)
- 1 cup yogurt (dahi), whisked
- 1 tablespoon gram flour (besan) – optional, helps prevent yogurt from curdling
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds (jeera)
- 1/2 teaspoon mustard seeds (optional)
- 1 dried red chili (optional)
- 1/2 teaspoon asafoetida (hing)
- 1-inch ginger, grated or finely chopped
- 2-3 green chilies, slit or chopped
- 1/2 teaspoon turmeric powder (haldi)
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder (dhania)
- 1/2 teaspoon cumin powder (jeera)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Boil the potatoes:
- Boil and peel the potatoes. Break them roughly into pieces or cubes.
- Prepare the yogurt mixture:
- In a bowl, whisk the yogurt along with gram flour (if using). This prevents the yogurt from curdling.
- Temper the spices:
- Heat oil or ghee in a pan. Add cumin seeds, mustard seeds (if using), dried red chili, and asafoetida. Let them splutter for a few seconds.
- Add ginger and green chilies:
- Add the grated ginger and green chilies to the pan. Sauté for a minute until fragrant.
- Add spices:
- Now add turmeric powder, red chili powder, coriander powder, and cumin powder. Stir and cook the spices on low heat for about 30 seconds.
- Add the yogurt mixture:
- Lower the heat and slowly pour the whisked yogurt mixture into the pan, stirring continuously to avoid curdling. Cook on low heat for 2-3 minutes.
- Add potatoes:
- Add the boiled potato cubes and mix well with the yogurt gravy. Add salt and cook for 5-7 minutes on low-medium heat until the potatoes absorb the flavors.
- Final seasoning:
- Sprinkle garam masala and stir. Cook for another minute.
- Garnish and serve:
- Turn off the heat and garnish with fresh coriander leaves.
Serve hot with roti, puri, or rice.
