Ingredients:
- 1 cup dried chickpeas (soaked overnight)
- 2 medium-sized onions (finely chopped)
- 2 tomatoes (pureed)
- 2 green chilies (finely chopped)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon amchur (dry mango powder)
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves (for garnishing)
- 4-6 kulche (store-bought or homemade)
Instructions:
- Drain the soaked chickpeas and rinse them thoroughly. In a pressure cooker, add the chickpeas along with enough water to cover them. Cook for about 15-20 minutes or until they are soft and tender.
- In a separate pan, heat oil and add cumin seeds. Once they start spluttering, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
- Add ginger-garlic paste and cook for a minute until the raw smell disappears.
- Now, add the tomato puree and cook until the oil separates from the masala.
- Next, add turmeric powder, red chili powder, garam masala, amchur, and salt. Mix well and cook for a few minutes to let the spices blend together.
