Kesar Pista Rabri is a traditional Indian dessert made by thickening milk and flavoring it with saffron (kesar) and pistachios (pista). It’s rich, creamy, and delicious. Here’s a recipe for making Kesar Pista Rabri:
Ingredients
- 1 liter full-fat milk
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- 10-12 strands of saffron (kesar)
- 2 tablespoons warm milk (for soaking saffron)
- 1/4 cup chopped pistachios
- 2 tablespoons almonds, sliced (optional)
- 1 tablespoon rose water (optional)
- Edible silver foil (varq) for garnish (optional)
Instructions
- Soak Saffron:
- Soak the saffron strands in 2 tablespoons of warm milk and set aside.
- Boil Milk:
- Pour the full-fat milk into a heavy-bottomed pan. Bring it to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.
- Thicken the Milk:
- Once the milk comes to a boil, reduce the heat to low and let it simmer. Stir the milk frequently, scraping the sides of the pan and incorporating the cream (malai) back into the milk.
- Continue this process until the milk reduces to about one-third of its original volume and becomes thick and creamy. This can take about 45 minutes to 1 hour.
- Add Flavorings:
- Add the soaked saffron along with the milk, sugar, cardamom powder, chopped pistachios, and almonds (if using). Mix well and continue to simmer for another 5-10 minutes.
- If using rose water, add it at this stage and mix well.
- Cool and Serve:
- Remove the pan from heat and let the Rabri cool to room temperature. Once cooled, you can refrigerate it for a few hours to serve it chilled.
- Garnish with additional chopped pistachios and edible silver foil (varq) before serving, if desired.

- Constant Stirring: Stir the milk frequently to prevent it from burning and to ensure a smooth, creamy texture.
- Thicker Consistency: For an even thicker consistency, you can simmer the milk for a longer time.
