Here’s a delicious recipe for Lentil Salad with Roasted Vegetables:
Ingredients:
For the Salad:
- 1 cup dried green or brown lentils, rinsed and drained
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, chopped
- 2 medium carrots, chopped
- 1 zucchini, chopped
- 2 cups cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese (optional)
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Cook the Lentils:
- In a medium pot, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender but not mushy. Drain and set aside to cool.
- Roast the Vegetables:
- Preheat the oven to 425°F (220°C).
- On a large baking sheet, toss the chopped bell peppers, red onion, carrots, zucchini, and cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper.
- Spread the vegetables in an even layer and roast for 20-25 minutes, or until they are tender and slightly caramelized. Let them cool slightly.
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper until well combined.
- Assemble the Salad:
- In a large bowl, combine the cooked lentils, roasted vegetables, and chopped parsley.
- Pour the dressing over the salad and toss gently to combine.
