Here’s a delicious recipe for Lentil Salad with Roasted Vegetables:

Ingredients:

For the Salad:

  • 1 cup dried green or brown lentils, rinsed and drained
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, chopped
  • 2 medium carrots, chopped
  • 1 zucchini, chopped
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup fresh parsley, chopped
  • 1/4 cup crumbled feta cheese (optional)

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Cook the Lentils:
    • In a medium pot, combine lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until tender but not mushy. Drain and set aside to cool.
  2. Roast the Vegetables:
    • Preheat the oven to 425°F (220°C).
    • On a large baking sheet, toss the chopped bell peppers, red onion, carrots, zucchini, and cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper.
    • Spread the vegetables in an even layer and roast for 20-25 minutes, or until they are tender and slightly caramelized. Let them cool slightly.
  3. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper until well combined.
  4. Assemble the Salad:
    • In a large bowl, combine the cooked lentils, roasted vegetables, and chopped parsley.
    • Pour the dressing over the salad and toss gently to combine.
    • Taste and adjust seasoning if needed. Add crumbled feta cheese if desired.
  5. Serve:
    • The salad can be served warm or chilled. It’s perfect as a main dish or a side.
