Malai Broccoli is an easy and delicious appetizer to make for just about any occasion! To make this recipe, broccoli florets are pre-blanched and coated with a creamy marinade and flavored with spices like cardamom, garam masala and then roasted to perfection in the oven.
Then topped with Cheese. This cheesy delight will be loved by people of all age groups. You can even cook Malai Broccoli in the tandoor for a smoky flavour.
How to make Malai Broccoli
Step 1 – Blanch broccoli florets
Cut the broccoli into medium florets and then blanch them in hot water, and keep it aside to get it to cool.
Step 2 – Make a creamy mixture
In a bowl, add hung curd, add grated processed cheese then add heavy cream and mix it well.
Step 3 – Add all the spices with salt and sugar in the creamy mixture
Then add chopped ginger, chopped garlic, white pepper powder, salt, sugar, garam masala, and cardamom powder and mix it well.
Step 4 – Coat the broccoli pieces with creamy mixture
Add blanched broccoli florets into the mixture and coat the broccoli until they are coated well.
Step 5 – Bake for 10 minutes at 180 degrees C
Now, place them in a tray and bake in the oven until the broccoli pieces turn golden brown for 10 minutes at 180 degrees C. Then add the shredded mozzarella cheese on top of the broccoli florets until the cheese is melted.
Step 6 – Serve hot
Once done, transfer to a plate sprinkled with chilli flakes or chaat masala and serve hot.

- 200 gm broccoli
- 50 gm heavy cream
- 50 gm garlic
- salt as required
- 1/4 teaspoon garam masala powder
- 100 gm mozzarella
- chaat masala powder as required
- 1/2 cup hung curd
- 50 gm ginger
- 1/4 teaspoon white pepper powder
- 1/4 teaspoon sugar
- 1/4 teaspoon green cardamom
- 50 gm processed cheese
