Ingredients:

  • Radish (mooli): 250g (with leaves, if possible)
  • Potato (optional): 1 medium-sized, diced
  • Onion: 1 small, finely chopped
  • Tomato: 1 medium, finely chopped
  • Green chili: 1-2, chopped (optional)
  • Ginger: 1 tsp, grated
  • Turmeric powder: 1/2 tsp
  • Red chili powder: 1/2 tsp
  • Cumin seeds: 1/2 tsp
  • Asafoetida (hing): A pinch
  • Coriander powder: 1 tsp
  • Garam masala: 1/2 tsp
  • Salt: To taste
  • Oil: 2 tbsp
  • Fresh coriander leaves: For garnish

Instructions:

  1. Prepare the Ingredients:
    • Wash and peel the radishes. Dice them into small pieces.
    • If the radish leaves are fresh and tender, chop them finely.
    • Dice the potato if using.
  2. Heat Oil:
    • Heat oil in a pan or kadhai.
    • Add cumin seeds and let them crackle.
    • Add a pinch of asafoetida (hing) for flavor.
  3. Sauté Aromatics:
    • Add chopped onions and sauté until they turn golden.

  6. Simmer:
    • Cover and cook on low heat for about 10-15 minutes, stirring occasionally.
    • If the mixture starts to stick, add a splash of water.
  7. Finishing Touch:
    • Once the vegetables are cooked and tender, sprinkle garam masala.
    • Mix well and cook for another 2 minutes.
  8. Garnish:
    • Turn off the heat and garnish with fresh coriander leaves.
