Here’s a detailed recipe for making Moong Dal Halwa, a rich and delicious Indian dessert made with yellow lentils (moong dal), ghee, sugar, and nuts. It’s a perfect treat for festive occasions or whenever you’re in the mood for something sweet and indulgent.
Ingredients
- 1 cup moong dal (yellow split lentils)
- 1 cup ghee (clarified butter)
- 1 cup sugar
- 2 cups milk
- 1 cup water
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/4 teaspoon cardamom powder
- A few saffron strands (optional)
- 2 tablespoons raisins (optional)
Instructions
- Soak the Moong Dal:
- Wash the moong dal thoroughly and soak it in water for 3-4 hours.
- Grind the Moong Dal:
- Drain the soaked moong dal and grind it into a coarse paste without adding any water.
- Cook the Moong Dal:
- Heat 1/2 cup of ghee in a heavy-bottomed pan or kadhai.
- Add the ground moong dal paste and cook on medium heat.
- Keep stirring continuously to prevent it from sticking to the bottom.
- Cook until the dal turns golden brown and releases a nutty aroma. This might take around 20-25 minutes.
- Prepare the Liquid Mixture:
- While the dal is cooking, in another pan, heat milk and water together.
- Once it starts boiling, add saffron strands if using.
- Combine Dal and Liquid:
- Once the dal is well roasted, slowly add the hot milk-water mixture to it.
- Be careful as it will splutter.
- Stir continuously to avoid lumps and cook until the liquid is absorbed and the mixture thickens.
- Add Sugar and Ghee:
- Add sugar and mix well. The halwa will become a bit watery after adding sugar.
- Cook on medium heat, stirring continuously until the halwa thickens again.
- Add the remaining ghee gradually, stirring continuously. The halwa will start leaving the sides of the pan and will become glossy.
- Finish the Halwa:
- Add cardamom powder and mix well.
- In a small pan, heat a tablespoon of ghee and fry the chopped nuts and raisins until golden.
- Add the fried nuts and raisins to the halwa and mix well.
- Serve:
- Moong Dal Halwa is best served hot, garnished with a few more nuts on top if desired.
