Here’s a detailed recipe for making Moong Dal Halwa, a rich and delicious Indian dessert made with yellow lentils (moong dal), ghee, sugar, and nuts. It’s a perfect treat for festive occasions or whenever you’re in the mood for something sweet and indulgent.

Ingredients

  • 1 cup moong dal (yellow split lentils)
  • 1 cup ghee (clarified butter)
  • 1 cup sugar
  • 2 cups milk
  • 1 cup water
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • 1/4 teaspoon cardamom powder
  • A few saffron strands (optional)
  • 2 tablespoons raisins (optional)

Instructions

  1. Soak the Moong Dal:
    • Wash the moong dal thoroughly and soak it in water for 3-4 hours.
  2. Grind the Moong Dal:
    • Drain the soaked moong dal and grind it into a coarse paste without adding any water.
  3. Cook the Moong Dal:
    • Heat 1/2 cup of ghee in a heavy-bottomed pan or kadhai.
    • Add the ground moong dal paste and cook on medium heat.
    • Keep stirring continuously to prevent it from sticking to the bottom.
    • Cook until the dal turns golden brown and releases a nutty aroma. This might take around 20-25 minutes.
  4. Prepare the Liquid Mixture:
    • While the dal is cooking, in another pan, heat milk and water together.
    • Once it starts boiling, add saffron strands if using.
  5. Combine Dal and Liquid:
    • Once the dal is well roasted, slowly add the hot milk-water mixture to it.
    • Be careful as it will splutter.
    • Stir continuously to avoid lumps and cook until the liquid is absorbed and the mixture thickens.
  6. Add Sugar and Ghee:
    • Add sugar and mix well. The halwa will become a bit watery after adding sugar.
    • Cook on medium heat, stirring continuously until the halwa thickens again.
    • Add the remaining ghee gradually, stirring continuously. The halwa will start leaving the sides of the pan and will become glossy.
  7. Finish the Halwa:
    • Add cardamom powder and mix well.
    • In a small pan, heat a tablespoon of ghee and fry the chopped nuts and raisins until golden.
    • Add the fried nuts and raisins to the halwa and mix well.
  8. Serve:
    • Moong Dal Halwa is best served hot, garnished with a few more nuts on top if desired.
