Muskmelon salad / kharbuja salad recipe – refreshing Indian style salad using muskmelon ( or cantaloupe ). This light salad has a mix of tangy, sweet and spicy flavors and easy to make in minutes. During hot summer days, the only thing I look forward to is the array of fruits that are in season like melons and mangoes.
Ingredients:
- 1 muskmelon (cubed)
- 1 cucumber (sliced)
- 1/4 red onion (thinly sliced)
- 1/4 cup feta cheese (crumbled)
- 1/4 cup fresh mint leaves (chopped)
- 1/4 cup fresh basil leaves (chopped)
- 1/4 cup extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and pepper (to taste)
- Optional: 1/4 cup toasted nuts (e.g., walnuts or almonds)
Instructions:
- Prepare the Muskmelon:
- Cut the muskmelon in half and remove the seeds.
- Scoop out the flesh and cut it into bite-sized cubes.
- Prepare the Vegetables:
- Peel and slice the cucumber.
- Thinly slice the red onion.
- Combine Ingredients:
- In a large bowl, combine the muskmelon cubes, cucumber slices, and red onion.
- Add Cheese and Herbs:
- Add the crumbled feta cheese, chopped mint, and basil leaves to the bowl.
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
- Toss the Salad:
- Pour the dressing over the salad and gently toss to coat all the ingredients evenly.
- Optional Nuts:
- If using, sprinkle toasted nuts over the top of the salad for added crunch and flavor.
- Serve:
- Serve immediately or refrigerate for 15-20 minutes to let the flavors meld together.
