Here’s a simple recipe for oil-free roasted potatoes that is both healthy and delicious:

Ingredients:

  • 4-5 medium potatoes (any variety, russet or red work well)
  • 1-2 teaspoons of garlic powder
  • 1 teaspoon of onion powder (optional)
  • 1 teaspoon of paprika or smoked paprika (for a smoky flavor)
  • 1 teaspoon of dried oregano or thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or cilantro, optional)
  • Lemon juice (optional, for a tangy finish)

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Potatoes:
    • Wash and scrub the potatoes thoroughly.
    • Cut them into evenly sized cubes or wedges for even cooking. The thickness of the pieces should be about 1 inch.
  3. Season the Potatoes:
    • In a large mixing bowl, toss the potatoes with garlic powder, onion powder (if using), paprika, oregano, salt, and pepper.
    • Make sure the potatoes are evenly coated with the seasoning.
  4. Arrange on Baking Tray:
