Pani puri are known as “golgappas” in Northern India and as “poochkas” in West Bengal. pani puri is crisp semolina puris filled with sprouts and chilled mint flavoured water make a great snack for a hot summer afternoon. When my favourite “ pani puri wallah” is serving me these delightful little puris one after the other, I just go on eating till I can eat no more! Sprouts can be replaced by hot ragda to complement the chilled mint water.
Round, hollow puri, filled with a mixture of flavored spicy green water, date-tamarind chutney, potatoes flavored with chaat masala, mung beans, chickpeas and potatoes!

- 2 cup Cilantro, Tightly Packed
- 1/2 cup Cilantro
- 12 oz Dates, Pitted
- 1 Lemon, Big
- 2 cup Mint, Tightly Packed Leaves
- 2 cup Mung
- 2 cup Potatoes
- 1 cup Sweet onions
- 8 Thai green chilis
Canned goods
- 2 tbsp Tamarind concentrate
Baking & spices
- 1/2 tsp Black pepper, Powder
- 5 tsp Salt, Black
Nuts & seeds
- 3 tsp Cumin, Roasted Powder
Dairy
- 1 cup Desi yogurt
Other
- 3 tsp Chaat masala
- 2 box Crispy puris (40-60 puris)
- 2 tbsp Jaggery
- 2 cup Boiled kala chana
- 2 tbsp Pani puri masala
- 1 cup Thin sev (optional)
