Rice Noodle Salad Recipe

This healthy lunch full of fresh herbs and shrimp is the salad equivalent of unwrapping a summer roll.

Directions

Step 1

Cook rice noodles per pkg. directions; rinse under cold water to cool and transfer to a container.

Step 2

In a bowl, whisk together lime juice, honey, fresh ginger, and salt.

Step 3

Toss with cucumber, scallion, and red chile. Spoon on top of noodles.

Step 4

Add cooked shrimp to container along with fresh cilantro and mint.

Step 5

When ready to eat, cover container and shake to toss.
