Sweet Mathri Recipe
Mathri is a popular north indian snack. This is a sweet version of the snack. The snack can be made in a jiffy. This sweet mathri is made with wheat flour, jaggery and then deep fried.
Ingredients:
- 1 cup all-purpose flour (maida)
- 1/2 cup semolina (sooji)
- 1/2 cup powdered sugar
- 1/4 cup ghee (clarified butter)
- 1/4 cup milk (as needed)
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon salt
- Oil for frying
Instructions:
- Mix Dry Ingredients:
- In a large mixing bowl, combine the all-purpose flour, semolina, powdered sugar, cardamom powder, and salt.
- Add Ghee:
- Add ghee to the dry ingredients. Mix well until the mixture resembles breadcrumbs.
- Knead Dough:
- Gradually add milk, a little at a time, and knead into a stiff dough. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
- Roll and Cut:
- Divide the dough into small portions. Roll each portion into a ball, then flatten it slightly. Using a rolling pin, roll out each ball into a thick disc (about 1/4 inch thick).
- Fry the Mathri:
- Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully slide in the rolled-out discs. Fry them on medium-low heat until they are golden brown and crispy. Make sure to fry in batches and avoid overcrowding the pan.
- Drain and Cool:
- Remove the fried mathris using a slotted spoon and place them on paper towels to drain excess oil. Allow them to cool completely.
- Store:
- Once cooled, store the sweet mathris in an airtight container. They can be enjoyed for up to a week.
Tips:
- Ensure the dough is stiff; otherwise, the mathris will absorb more oil and become soft.
- Fry on medium-low heat to ensure the mathris cook evenly and become crispy.
- You can adjust the sweetness by varying the amount of powdered sugar.
