  • 1 large sweet potato (about 1 1/2 cups mashed)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup rolled oats (you can use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley or cilantro
  • Olive oil for cooking

Instructions:

  1. Prepare the Sweet Potato:
    • Preheat your oven to 400°F (200°C).
    • Pierce the sweet potato with a fork several times, then bake it directly on the oven rack for about 45-60 minutes, until it’s tender. You can also microwave it for a quicker option.
