Vegan Sticky Sesame Chickpeas
Ingredients:
- For the Chickpeas:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon sesame oil (or olive oil)
- 1 tablespoon soy sauce or tamari (for gluten-free)
- 1 tablespoon maple syrup
- 1 teaspoon sriracha (optional for heat)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 2 tablespoons water
- For the Sticky Sauce:
- 1/4 cup soy sauce or tamari
- 2 tablespoons maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)
- 1 tablespoon sesame seeds
- Chopped green onions (for garnish)
Instructions:
- Prepare the Chickpeas:
- Heat 1 tablespoon of sesame oil in a large skillet over medium heat.
- Add the chickpeas and cook for 5-7 minutes, stirring occasionally, until they begin to brown slightly.
- Stir in the soy sauce, maple syrup, sriracha, garlic powder, ground ginger, and 2 tablespoons of water. Cook for another 2-3 minutes until the chickpeas are well coated and the liquid has reduced. Remove from heat and set aside.
- Make the Sticky Sauce:
- In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger.
- Pour the sauce into a small saucepan and bring to a simmer over medium heat.
- Add the cornstarch mixture to the saucepan and stir continuously until the sauce thickens, about 2-3 minutes.
- Combine and Serve:
- Pour the sticky sauce over the cooked chickpeas in the skillet and stir to coat evenly.
