Vegan Sticky Sesame Chickpeas

Ingredients:

  • For the Chickpeas:
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon sesame oil (or olive oil)
  • 1 tablespoon soy sauce or tamari (for gluten-free)
  • 1 tablespoon maple syrup
  • 1 teaspoon sriracha (optional for heat)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 2 tablespoons water
  • For the Sticky Sauce:
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)
  • 1 tablespoon sesame seeds
  • Chopped green onions (for garnish)

Instructions:

  1. Prepare the Chickpeas:
  • Heat 1 tablespoon of sesame oil in a large skillet over medium heat.
  • Add the chickpeas and cook for 5-7 minutes, stirring occasionally, until they begin to brown slightly.
  • Stir in the soy sauce, maple syrup, sriracha, garlic powder, ground ginger, and 2 tablespoons of water. Cook for another 2-3 minutes until the chickpeas are well coated and the liquid has reduced. Remove from heat and set aside.

  • In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger.
  • Pour the sauce into a small saucepan and bring to a simmer over medium heat.
  • Add the cornstarch mixture to the saucepan and stir continuously until the sauce thickens, about 2-3 minutes.

  • Pour the sticky sauce over the cooked chickpeas in the skillet and stir to coat evenly.
  • Sprinkle with sesame seeds and chopped green onions.
