Ingredients

  • 2 cans (15 ounces each) white beans (such as cannellini or great northern beans), drained and rinsed
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 cups vegetable broth
  • 1 cup water
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, chopped (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the Base:
