Ingredients
- 2 cans (15 ounces each) white beans (such as cannellini or great northern beans), drained and rinsed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 4 cups vegetable broth
- 1 cup water
- Salt and pepper to taste
- 2 cups fresh spinach or kale, chopped (optional)
- 1 tablespoon lemon juice (optional)

Instructions
- Prepare the Base:
